Potato Salad & Canada Day!!
Calgary is Sunny!!! All set for BBQ and some cocktails. Please enjoy my FAV potato sald recipe
| OLD FASHIONED POTATO SALAD | |
6 med. potatoes
3 boiled eggs, diced
1 onion, diced
2 tbsp. pimento, diced
4 tbsp. sweet pickle relish
1/2 tsp. salt
1/2 tsp. celery seed THE HOMEMADE DRESSING: 2 eggs
1/2 c. vinegar
1/2 c. sugar
1/2 c. water Boil potatoes until tender. Peel and dice; add eggs, onion, pimento, pickle relish, and salt. Mix well. For the Dressing: Beat eggs and add the vinegar, sugar, and water. Boil thoroughly. Combine with potato mixture. Sprinkle celery seed on the top. Cover and refrigerate. |
